Resumen: El objetivo del presente estudio fue optimizar experimentalmente el proceso de liofilización (LIO) de las hojas de Estragón Ruso (Artemisia drancunculus l) y comparar estadísticamente el producto liofilizado a la condición óptima, con el obtenido por secado por convección (SC). Se utilizó un liofilizador de bandejas, donde inicialmente el material vegetal fue enfriado desde 25 °C hasta -40 °C, a una velocidad de 0.22 °C/min. La optimización se realizó con la metodología de superficie de respuesta con un diseño “optimal”, en función de la variable independiente velocidades de calentamiento de la placa (0.03 – 0.06 °C/min) desde -40 °C hasta 35 °C. y las variables dependientes: humedad, actividad de agua, actividad antioxidante, color y tiempo. El SC, fue realizado a 45 °C, velocidad de aire 0,6 m/s y tiempo 22,8 horas. El tiempo de proceso de LIO presentó diferencias estadísticas con respecto al factor velocidad de calentamiento de placa (VC). En el tipo de secado, los productos LIO presentan mejores propiedades que los productos SC, conservando su geometría inicial, de tono verdoso y con excelente actividad antioxidante.Resumen
Abstract: The Main objective of this study was to experimentally optimize the process of freeze drying (FD) of the Russian Tarragon leaves (Artemisia dracunculus) and to statistically compare the product lyophilized to the optimum condition, with the one obtained by convection drying (CD). The leaves were frozen from at 25C to -40 at a rate 0.22 c/min in a laboratory freeze dryer. The optimization was done with surface response methodology with an “optimal” design, in function of the independent variable heating rate of the plate (0.03 – 0.06 C/min) from -40 C to 35 C, and the dependent variables humidity, water activity, antioxidant activity, color and time. The CD, was done at 45 C, air velocity 0.6 m/s and time 22.8 hours. The time of the LIO process showed statistical differences in terms of the heating rate of the plate (HR). In the drying time, the FD products show better properties than the CD products, keeping their initial geometry, greenish tone and excellent antioxidant activity.Palabras clave
