La calidad del café se define como el resultado de un conjunto de procesos que permiten la expresión, desarrollo y conservación de las características fisicoquímicas propias del café hasta el momento de su transformación y consumo. Algunas variables que definen ésta calidad son: El clima donde se cultiva, la variedad, el proceso de beneficio (transformación de café cereza hasta café verde), almacenamiento, tostión, preparación de la bebida, entre otras. Existen varios métodos de torrefacción (tostión) de café: el de tambor rotario (transferencia de calor por conducción) es el más empleado mundialmente, sin embargo su eficiencia en términos de temperatura y tiempo (HTLT, alta temperatura, tiempo prolongado) no es la mejor. Los tostadores de lecho fluido (transferencia de calor por convección) surgen como alternativa al método tradicional. Éste estudio tiene como objetivo determinar las diferencias en términos de calidad sensorial entre 4 diferentes condiciones/métodos de tostión de dos muestras de café colombiano (Coffea Árbica L), a partir de un tratamiento estadístico por el método de Kruskall Wallis.Resumen
Abstract. Coffee Quality is defined as the result of a set of processes that allow the expression, development and conservation of the physicochemical characteristics of coffee until the time of its transformation and consumption. Some variables that define this quality are: The climate, the variety, the benefit process (transformation of cherry coffee to green coffee), storage, roasting, and preparation of the drink, among others. There are several methods of roasting coffee: the Rotary Drum (conductive heat transfer) is the most used worldwide, however its efficiency in terms of temperature and time (HTLT, high temperature, prolonged time) is not the best. Fluid Bed Roasters (convective heat transfer) arise as an alternative to the traditional method. This study aims to determine the differences in sensorial quality between 4 different conditions / methods of roasting of two samples of Colombian Coffee (Coffea Arica L), based on a statistical treatment by the Kruskall Wallis method.Colecciones
