Evaluación de β-glucanos de Ganoderma lucidum como sustituto de grasa en tortas

En este trabajo se presenta una evaluación tecnológica del uso β-glucanos de Ganoderma lucidum (βGGL) como sustitutos de grasa en tortas. Varios niveles de reemplazo (20, 30, 40 y 50%) fueron investigados. Se analizaron las propiedades fisicoquímicas de los batidos y de las tortas, el efecto de la sustitución de grasa en la incorporación de aire en los batidos, y la microestructura de las tortas. Las variables físicas determinantes de la vida útil de tortas (actividad de agua, humedad, color y textura) fueron evaluadas durante 15 días de almacenamiento. Los resultados obtenidos indican que el reemplazo de grasa afectó significativamente la gravedad específica, las propiedades de flujo, y el color de los batidos. Los análisis microscópicos de los batidos mostraron que el aumento en la sustitución de grasa generó una disminución de las burbujas de aire, que condujo a una reducción en el volumen de las tortas (1086,5 vs. 1053,2 cm3 para el control y las tortas con una reducción de grasa del 50%, respectivamente). La dureza de las tortas frescas no fue afectada por la inclusión de βGGL, sin embargo presentó un incremento progresivo durante la vida útil, siendo más pronunciado a medida que la sustitución de grasa incrementó. No se presentaron diferencias significativas ni en el color de la corteza ni en el de la miga. La inclusión de βGGL no generó cambios significativos en la humedad y actividad de agua de las muestras. Las micrografías electrónicas revelaron que la estructura de la miga fue afectada por la sustitución de grasa. Las tortas con un reemplazo de grasa al 40% fueron bien aceptadas por panelistas no entrenados. Estos resultados indican los βGGL podrían ser eficientes sustitutos de grasa en tortas. This work presents a technological evaluation of using β-glucans of Ganoderma lucidum (βGGL) as fat replacers in cakes. Various replacement levels (20, 30, 40 and 50%) were investigated. The physicochemical properties of batters and cakes, the effect of replacing fat in the incorporation of air into the batters, and the microstructure of the cakes, were analyzed. The physical variables determining the shelf-life of cakes (water activity, moisture, color and texture) were evaluated during 15 days of storage. The obtained results indicate that replacement of fat significantly affect specific gravity, the flow properties, and the color of the batters. Microscopic analysis showed that batters increased fat replacement generated a decrease in the air bubbles, leading to a reduction in the volume of the cakes (1086.5 vs.1053.2 cm3 for the control and cakes with a fat reduction of 50%, respectively). The hardness of fresh cakes was no affected by inclusion of the βGGL, however it showed a progressive increased during shelf-life, being more pronounced as the fat replacing increased. No significant differences in the crust and crumb colors were presented. The inclusion of βGGL does not generate significant changes in the moisture content and water activity of the cake samples. Scanning electron micrographs revealed that the crumb structure was affected by the fat substitution. Cakes with a replacement fat 40% were well accepted by untrained panelists. These results indicate the βGGL could be effective fat substitutes in cakes.Palabras clave
