Resumen
En el mundo, la industria cárnica ha sido considerada como una industria de alto riesgo de DME siendo estos la principal causa de accidentes de trabajo no mortales y de ausentismo en los lugares de trabajo.La información científicamente fundamentada proveniente de la vigilancia de las condiciones de trabajo y de las condiciones de salud hace posible el desarrollo de programas de prevención orientados a la eliminación y/o reducción de la exposición a factores de riesgo relacionados con la carga física en el sitio de trabajo. En este proyecto se considera definir los criterios técnicos, metodológicos y científicos para un sistema de vigilancia epidemiológica de los DME en el proceso industrial del sacrificio de ganado bovino y porcino.
Abstract. Meat industry is widely believed as one of the most risky industries of DME in the world, which actually are the main cause of non mortal job's accidents. The information, which is scientifically based on the supervision of job's conditions areas and their health conditions, makes possible the development of prevention programs oriented to the elimination or decrease of exposition to risky factors related to physical load on work areas. This project is considered to define technical, methodological and scientific criteria in order to include them into the epidemiological supervision's system in the industrial process of cattle and swine's slaughter.
