Diferencias nutricionales entre algunos productos de origen agroecológico y convencional en el Valle del Cauca

dc.description.abstractActualmente, el mundo enfrenta el desafío de desarrollar sistemas de producción de alimentos que permita proteger el medio ambiente y sus recursos, que establezcan una relación equilibrada con quienes trabajan directamente en su producción. El presente estudio tiene como objetivo evaluar los sistemas de producción agroecológica en el Valle del Cauca, Colombia, en términos de calidad nutricional de sus productos principales: huevo, pollo y plátano. Se analizaron y compararon los contenidos de humedad, proteína, grasas, cenizas y minerales, como fósforo y potasio, en huevos y pechugas de pollo de sistemas agroecológicos, convencionales y comerciales; así como humedad, cenizas, fósforo, potasio, calcio y magnesio en plátanos de estos tres orígenes. Se empleó un análisis de varianza (ANOVA) y un análisis de varianza multivariante (MANOVA), validación de supuestos y pruebas de comparaciones múltiples, utilizando el software R-Studio. Los productos agroecológicos mostraron menor humedad (huevos: 72,08 g/100 g; pechugas de pollo: 73,95 g/100 g; plátanos: 56,75 g/100 g) y mayor contenido de grasa en huevos (11,09 g/100 g). Las pechugas de pollo agroecológicas tuvieron más proteínas (22,37 g/100 g), cenizas (1,15 g/100 g) y potasio (281 mg/100 g). Los plátanos agroecológicos presentaron mayor contenido de cenizas (0,85 g/100 g) y calcio (8 mg/100 g) con un p < 0,05. En conclusión, los productos agroecológicos ofrecen una mejor calidad nutricional, debido principalmente a una mayor proporción de masa seca y diferencias significativas en ciertos nutrientes clave. Este hallazgo respalda la validez de los sistemas de producción agroecológica en el Valle del Cauca, Colombia, y concuerda con resultados similares encontrados en investigaciones de agroecología a nivel mundial. dc.description.abstractCurrently, the world faces the challenge of developing food production systems that protect the environment and its resources, and establish a balanced relationship with those who directly work in their production. This study aims to validate the agroecological production systems in the Valle del Cauca, Colombia, in terms of the nutritional quality of their main products: eggs, chicken, and plantain. The moisture, protein, fat, ash, and mineral contents, such as phosphorus and potassium, in eggs and chicken breasts from agroecological, conventional, and commercial systems were analyzed and compared; as well as the moisture, ash, phosphorus, potassium, calcium, and magnesium content in plantain from these three origins. An analysis of variance (ANOVA) and a multivariate analysis of variance (MANOVA), validation of assumptions and multiple comparison tests were used, utilizing the R-Studio software. Agroecological products showed lower moisture (eggs: 72,08 g/100 g; chicken breasts: 73,95 g/100 g; plantain: 56,75 g/100 g) and higher fat content in eggs (11,09 g/100 g). Agroecological chicken breasts had more proteins (22,37 g/100 g), ashes (1,15 g/100 g), and potassium (281 mg/100 g). Agroecological plantain had a higher content of ashes (0,85 g/100 g) and calcium (8 mg/100 g) with a p < 0,05. dc.description.methodsSe propuso una metodología que consta de diversas etapas, destacando que las mismas se implementa bajo el marco de la Investigación Acción Participativa (IAP) descrita por Colmenares, (2012). La finalidad de la IAP es la transformación de la realidad social mediante acciones ideadas e implementadas por los mismos participantes, en este caso, los agricultores. Se estimó una muestra estadísticamente representativa que incluye un total de 11 fincas. Este valor se estableció aplicando la ecuación (1.1) para el cálculo de muestras en poblaciones finitas. El criterio principal para estimar la población total fue que las fincas fuesen reconocidas por la Red de Mercados Agroecológicos como productores certificados, obteniendo así una población finita de 154 fincas. Los parámetros adicionales incluyeron: Confianza del 90%, Margen del 10% y probabilidad del 5%. Adicionalmente, para potenciar la capacidad estadística, se seleccionaron fincas de 8 ciudades diferentes para incrementar la frecuencia de aparición de fenómenos de interés.spa
