In this work, deep eutectic solvents (DES) were synthesized and characterized using caffeine hydrochloride (CafCl) obtained from both commercial sources and agro-industrial residues from coffee processing. Binary systems were formulated with three metal halides (FeCl3, ZnCl2, and CuCl2) as hydrogen bond acceptors (HBAs) and three polyhydroxylated compounds (ethylene glycol (ETG), glycerol (GLI), and polyethylene glycol (PEG)) as hydrogen bond donors (HBDs), at different molar ratios. Viscosity, density, and glass transition temperature (Tg) were evaluated, showing that the HBD plays the most significant role: viscosity and density followed the order PEG<ETG<GLI, while Tg varied as ETG<GLI<PEG. The ETG:ZnCl2 (1:2) system was identified as optimal due to its low viscosity (150 cP at 60 °C), density (1,65 g/mL at 25 °C), and ability to incorporate CafCl at room temperature (up to 0,32 molar). In ternary systems, increasing CafCl content raised viscosity from 9600 to 28000 cP (25 °C), while density decreased linearly from 1,6196 to 1,5803 g/mL. Comparisons between DES prepared with commercial and residue-derived caffeine showed differences below 10 % in all physicochemical properties, confirming the feasibility of using residues as raw material. These findings contribute to the development of sustainable solvents and highlight residue valorization within a circular economy frameworkeng
