Resumen
El trabajo estudia la cinética de secado por aire caliente y evalúa la influencia de la temperatura del aire de secado sobre características fisicoquímicas y bioactivas en polen apícola. Para realizar el estudio se establecieron tres temperaturas (50 °C, 55 °C y 60 °C) y dos velocidades de aire de secado (3 m s-1 y 4 m s -1 ). Los datos experimentales de las curvas de secado se analizaron empleando un modelo difusivo basado en la Segunda ley de Fick para un sistema de geometría esférica junto con los datos de humedad obtenidos con las isotermas de desorción. Los resultados indican que cuanto mayor es la temperatura del aire de secado el tiempo requerido para secar es menor y que se obtiene un mejor ajuste del modelo considerando el coeficiente de la difusividad efectiva dependiente de la temperatura. En cuanto a la influencia de la temperatura del aire de secado en la calidad del producto final se evidenció que no existe diferencia estadísticamente significativa en el contenido de fenoles totales, contenido de vitamina E, contenido de carotenoides y la actividad antioxidantes en las muestras antes y después del proceso.
Abstract: The research studies the kinetics of the hot air drying and evaluates the influence of air - drying temperature on the physical, chemical and biological characteristics in bee pollen. To do the research three temperatures were established (50°C, 55°C and 60°C) and two drying air velocities (3 m s-1 and 4 m s -1). The experimental data of the drying curves was analyzed using a diffusive model based on Fick’s Second Law for a geometric sphere system together with the humidity data obtained with the desorption isotherms. The results show that the higher the air’s temperature is, the time required for drying the pollen is reduced; and that the results have a better adjustment to the model considering the coefficient of the effective diffusiveness depending on the temperature. In respect to the influence of the drying-air’s temperature on the final product quality, it can be evidenced that there is not meaningful statistical difference on the amount of total phenol, vitamin E, carotenoids as well as the antioxidant activity before and after the research process.
